Apple Compote Crostini


Serves 8


3 Honeycrisp Apples peeled, cored and chopped
3 TBS unsalted butter
1/4 cup brown sugar
1/2 tsp cinnamon
French bread, sliced and toasted for serving
Brie wedges,for serving
Fresh-chopped rosemary, for garnish


Preheat oven to 350 degrees

Combine apples, butter, brown sugar and cinnamon in a pot over low-heat.  Simmer for 20-30 minutes or until apples mash easily into rough paste, leaving some apple chunks throughout.  Remove from heat and allow to cool to room temperature.  Place French bread slices on parchment paper-lined baking sheet.  Top each piece of bread with a small wedge of Brie. Bake for about 5 minutes or until the Brie softens.  Spoon apple compote over Brie and sprinkle with rosemary.  Refrigerate any leftovers.
