Brandied Walnut Pie (6 servings)

1 9-inch pie crust
I Cup packed dark brown sugar
2 large eggs
½ Cup melted butter
I tsp. pure vanilla extract
3 T brandy
1/2 tsp. Salt
2 cups coarsely chopped walnuts
Sweetened whipped cream
 

In a large bowl, combine brown sugar, eggs, butter, vanilla, brandy and salt. Beat for 2 minutes and stir in walnuts. Pour into uncooked pastry shell. Bale at 350 degrees for 30 minutes or until filling sets. Serve with sweetened whipped cream.
