Brown Soda Bread
    Makes 1 loaf

1    cup plus 2 tablespoons all purpose flour
4   cups whole wheat flour
1/3 cup toasted wheat germ
1-1/2 teaspoons baking soda
1-1/2 teaspoon baking powder
1-1/2 teaspoons salt
2-1/3 cups (about) buttermilk

Preheat oven to 400oF.  Sprinkle baking sheet with 2 tablespoons all purpose flour.  Mix remaining 1 cup all purpose flour, 4 cups whole wheat flour, 1/3 cup toasted wheat germ, 1-1/2 teaspoons baking soda, baking powder and salt in large bowl.  Stir in enough buttermilk to form slightly moist dough.  Turn bread dough out onto lightly floured work surface and knead dough until smooth, about 1 minute.

Pat dough into 8-inch round.  Transfer dough round to prepared sheet.  Using small sharp knife, cut 1/4 inch deep crisscross lines into top of dough round.  Bake until bread sounds hollow when tapped on bottom, about 50 minutes.  Transfer loaf to rack.  Wrap loaf in towel.  Cool bread completely before slicing and serving.
