Caesar Salad

10 servings

6 Tbs fresh lemon juice
2 Tbs minced garlic
1 Tbs dry mustard
1 Tbs anchovy paste
1Tbs Worcestershire sauce
cup olive oil

3 large heads romaine lettuce heads, torn into bite-size pieces
1 cups croutons
1 cup freshly grated Parmesan

Whisk first 5 ingredients in bowl.  Gradually whisk in olive oil.  Season with pepper.  (Can be made 1 day ahead.  Cover, chill.  Bring to room temperature before using.)

Place lettuce and croutons in large bowl.  Add dressing and Parmesan cheese and toss thoroughly to coat.
