Sopa De Melon Melon Soup


 
Serves 10

 

5 cantaloupes ( Rock melons)

4 tablespoons honey

1/2 cup fresh lemon juice

1-1/4 cups  fresh orange juice

1/2 cup  port

 

  1. Cut the cantaloupes in half, remove and discard the seed, then scoop out the pulp, being careful not to tear the peel.  Set the 10 cantaloupe shell aside.
  2. Roughly chop the cantaloupe pulp and puree in a blender with the honey, lemon juice, orange juice and port.
  3. Chill well before serving. Use the cantaloupe shells as soup bowls.
