Quiessence Salad for Four


Greens- Combination of:

                 ½ lb arugula

                1/3 head romaine or baby lettuces               

                 1 head fennel

                 1 shallot (for dressing)

Herbs – pinch each to taste:  fennel tops, fresh tarragon, basil, parsley, S & P

Fruit -     1 ruby red grapefruit

              1 navel orange              

              1 tangelo (or substitute mandarin oranges)

Nuts-       ¼ to ½ C cashews – toasted


Dressing:    ¼ C honey

                    ¼ C white wine vinegar

                  1 tsp finely chopped shallot

                   ¾ C blended olive & canola oils

                   Spices - a pinch each to taste- ground cinnamon & nutmeg, S & P         



Mix together honey, vinegar, shallots,  and spices.  Whisk in the oil.  Taste on a piece of lettuce and adjust the seasoning as needed.   In a mixing bowl shave the fennel head with a mandolin.  Add arugula & lettuce along with herbs.  Segment the fruits and add to bowl. 

Add dressing to salad & serve immediately.
