Mkate wa ufuta

(Sesame bread)

Serves 6 to 8

A speciality of Zanzibaris

    2 lbs plain white flour
    1 package yeast
    2 cups coconut milk
    2 eggs
    2 Tbs sesame seeds
    salt to taste
    Sieve the flour into a bowl and add all the ingredients except the sesame seeds.  Mix and knead to make a smoth dough.  Cobver and leave in a warm place to rise for 30 minutes.  Divide the dough into small balls.  Pat each ball into a round shape between the palms of your hand and then pull one side to make a teardrop shape.  SPrinkle with sesame seeds and cook lightly on both side under a broiler or on a griddle.
