Sea Food Cocktail with Cucumber Lime Cocktail Sauce

serves 4


20 Shrimp, 16/20 ct., cooked, peeled, de-veined, tail-on
1/4 cup crab salad
1/2 cucubmer, peeled and thinely sliced
1/4 thinely sliced red onion
1 Tbs of lime juice
1/4 tsp salt
1 avocado, diced
4 lime slices
Fresh cilantro sprigs to garnish

Cucumber Lime Cocktail Sauce

1 cup Tomato ketchup
2 tsp. Cilantro, minced
1/4 cup Cucumber, peeled, seeded, fine dice
1/4 cup Tomato, fine dice
1/4 tsp. fresh jalapeno pepper, finely diced
2 tsp lime juice
Salt and fresh ground pepper to taste

Prepare  Cucumber Lime Cocktail Sauce by combining ingredients and mixing thoroughly. Adjust seasoning if necessary. Allow flavors to develop for two hours under refrigeration.

Combine cucumber and onion slices with 1 Tbs if lime juice and a 1/4 tsp salt.

For service, line Martini glasses with the onion and cucmber slices. Arrange shrimp  around rim of glasses. Place a generous portion of the cucumber lime cocktail sauce in the center top with 1 Tbs of crab salad,  top with diced avocado. Garnish with a lime slice, fresh cilantro sprigs. Serve immediately.
