Sweet and Sour Spinach Salad

4 Egg yolks
1 teaspoonDry mustard
1 teaspoonSalt
¼ teaspoonWhite pepper
½ cupOlive oil
¼ cupSugar
3 tablespoonsRed wine vinegar
Juice of 1/2 lemon
1 bunchSpinach, lg, stems discard torn into pieces
12 White mushrooms, thin sliced
¾ cupBacon, cooked, crumbled, about 1/2 lb


Beat yolks in sm bowl until light and lemon colored. Add mustard, salt and pepper and blend well. Whisking constantly, add oil drop by drop, then in slow steady stream, until thickened. Stir in sugar, vinegar, and lemon juice, and mi well. 

Place spinach in lg salad bowl. Add mushrooms and bacon and dressing. 

Toss well.
